Title: Chocolate Golf Course Cake

AMERICAN MEASUREMENTS
2cGranulated sugar
1 3/4cAll-purpose flour
2/3cUnsweetened cocoa
1 1/2tsBaking soda
3/4tsSalt
1 2/3cMilk
1/2cShortening
3 Eggs
1tsVanilla flavoring
GREEN BUTTERCREAM FROSTING
1/2cButter or margarine; soft
1lbPowdered sugar (about 4 c)
3tb(To 4) milk
1tsVanilla flavoring
  Green food coloring
DECORATIONS
  Graham cracker crumbs
  OR Light Brown sugar
  Toothpicks & paper triangles
  Small piece of marshmallow
  OR ball of white frosting

Preheat oven to 350 degrees F. Grease and flour a 9-by-13-inch baking pan.

TO MAKE CAKE: Stir together sugar, flour, cocoa, baking soda and salt in a large bowl. Add milk, shortening, eggs and vanilla. Beat on low speed of electric mixer for 30 seconds to blend ingredients. Beat on medium speed for 3 minutes, scraping bowl occasionally. Pour batter into prepared pan. Bake 35 to 40 minutes, or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pan to wire rack. Cool completely. Place cake on tray.

TO MAKE FROSTING: Beat butter or margarine until creamy in large bowl. Gradually add about 1/2 of the powdered sugar, beating well. Slowly beat in milk and vanilla. Gradually add remaining powdered sugar, beating until smooth. Add additional milk, if necessary, until frosting is of spreading consistency. Save 1 tablespoon to make a decorative golf ball.

TO PREPARE FROSTING: Put about 1/2 of the frosting in a small bowl. Add enough food color to resemble dark-green grass; frost entire cake with this mixture. If desired, press pastry brush or knife over surface for "grassy" texture.

Tint remaining frosting a lighter green; outline three areas for greens on top of cake. Fill in outlines with the lighter green frosting.

TO DECORATE GOLF COURSE: Sprinkle graham cracker crumbs or light brown sugar on small area to resemble a sand trap. Mark small triangular pieces of paper with numbers to identify specific holes; glue flags onto toothpicks. Place flags at greens. A small ball of white frosting or a small piece of marshmallow may be used for the golf ball.
